Ingredients

  • 1 cup unsalted butter room temp
  • 1 cup vegetable oil
  • 1 cup organic sugar
  • 1 cup powdered sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1-2 teaspoons almond extract
  • 4 ¼ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon kosher salt

Instructions

  • Preheat oven to 375 degrees.
  • Cream together the sugars, oil and butter.
  • Add the eggs, almond extract and vanilla and beat until fluffy.
  • Sift dry ingredients together and add to butter mixture gradually beating until just blended.
  • Drop by rounded tablespoons (I use small ice cream scoop) on ungreased sheet pan (I use Silpat baking sheets).
  • Using a flat bottom glass, dip the bottom of the glass in sugar and slightly press down on each cookie before baking.
  • bake about 12 minutes
  • These cookies spread out, so place far apart when baking.  Let cool slightly on baking sheet before transferring to rack to cool.

Ingredients

For the Cake

  • 1 cup sugar
  • 1 cup olive or avocado oil
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 cup almond flour
  • 1 cup gluten free flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1-2 teaspoons salt
  • ¼ teaspoon nutmeg
  • 3-3 ½ shredded carrots
  • 1 cup chopped walnuts

Frosting

  • 8 oz Cream Cheese Brick
  • 4 oz Butter (1/2 stick)
  • 2 tsp vanilla
  • 2 cup confectioner sugar

Instructions

Cake

  • Preheat oven to 325
  • Blend the first four ingredients.
  • Add remaining ingredients, except the carrots and walnuts.
  • Once that is blended, add the carrots and walnuts.
  • Bake at 325 degrees for about 45 minutes in a bundt pan or two rounds.

Frosting

  • Be sure to let the cake totally cool before removing it from the pan. Gluten free baked goods need to be cooled before you can cleanly remove them from the pan.
  • Combine 8 oz of brick cream cheese, half a stick of butter (4 oz.), 2 teaspoons vanilla, and 2 cups confectioner sugar, added slowly one cup at a time.

Ingredients

For the Shortbread Crust

  • 1/2 lb unsalted butter (16 Tbsp) room temperature
  • 1/2 cup granulated sugar
  • 1 1/2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/4 tsp salt

For the Lemon Filling

  • 7 large eggs room temperature
  • 3 cups granulated sugar
  • 2 Tbsp lemon zest from 4 to 5 lemons
  • 1 cup lemon juice freshly squeezed (from 5 large or 8 medium lemons)
  • 1 cup all-purpose flour
  • Confectioners sugar to dust

Instructions

  • PREP: Preheat oven to 350˚F. Line a 13x9x2” baking pan with parchment paper (it should go most of the way up the sides so filling doesn’t spill over.
  • CRUST: In the bowl of a stand mixer fitted with the paddle attachment, cream together softened butter and 1/2 cup sugar. Add 1 1/2 tsp vanilla extract, 2 cups flour and 1/4 tsp salt. Continue mixing until mixture is crumbly and no dry flour remains. Spread the dough evenly into the bottom of your prepared pan. Press it with your fingertips to flatten and even out the dough. Bake crust at 350˚F for 18-20 minutes or until lightly golden at the edges. Transfer to a wire rack to cool slightly.
  • FILLING: While the crust is baking, zest then squeeze the lemons and prepare your filling. In a large mixing bowl, whisk together eggs and sugar until blended. Add Lemon juice and lemon zest and whisk to combine. Add 1 cup flour and whisk until smooth and very well blended and no traces of flour remain.
  • BAKING: Pour filling over the warm crust and bake in the center of a preheated oven at 350˚F for 30-35 minutes or until the filling is set. As soon as the filling is no longer wobbly in the center, remove from the oven so you don’t over-bake. Cool in the pan at room temperature for at least 1 hour then refrigerate for at least 2 hours before serving.
  • TO SERVE: Pull the parchment paper up slightly to loosen from the pan then transfer to a cutting board and cut into 18-20 squares then dust the tops with powdered sugar.

Ingredients

  • 1 Pork Tenderloin for every 3-4 people

Rub for 2 tenderloins

  • 2 tbsp finely chopped rosemary
  • 2 tsp ground black pepper
  • 1 tsp salt
  • Zest of one lemon
  • Enough olive oil to make a liquidy paste
  • 2 tbsp finely chopped garlic we use it from a jar

Instructions

  • Add rosemary, black pepper and salt to a small bowl and stir thoroughly.
  • Add the lemon zest and stir
  • Stir in the garlic and olive oil, making a thick liquidy paste
  • Coat the tenderloin thoroughly in the rub
  • Leave to infuse for 30 mins
  • Pre heat the grill to high (550F) (around 10 minutes)
  • Approximately 16 mins grill time on high, turning every 4 mins so all sides are charred. Until internal temperature is 150F (note if grill temperature can’t reach 550F it will take longer)
  • Let it rest for 10 minutes loosely tented with foil
  • Carve on a diagonal, 3/8” slices and serve
  • Drizzle the juices that are released during resting time over the slices

Ingredients

  • 5 slices bacon crumbled
  • 8 oz. hot Italian sausage links sliced
  • 2 medium onions
  • 1 green pepper
  • 1 ½ lb. beef chuck steak diced
  • 1 clove garlic
  • 2 tsp red pepper flakes
  • 2 jalapeno peppers seeded and chopped
  • tbsp chili powder
  • ½ tsp dried oregano
  • 1 12 oz. can tomato paste
  • 2 ½ cup water
  • 1 16 oz. can pinto beans drained
  • 1 16 oz. can garbanzo beans drained

Instructions

  • In large pan, cook bacon till crisp; drain and crumble. Put in large Dutch oven.
  • Brown sausage in same pan; drain and reserve 2 tbsp. drippings in pan. Place cooked sausage in Dutch oven.
  • Add diced onions and green pepper, with cubed beef and garlic in pan and cook until browned. Add to Dutch oven.
  • To Dutch oven, add red chili peppers, jalapeno peppers, chili powder, oregano and ½ tsp. salt. Stir in tomato paste and 2 ½ c. water.
  • Cook on medium high heat until it boils, then turn it down and let simmer covered for 1 ½ hours. Stir occasionally.
  • Add beans 30 – 45 minutes before the end.

Ingredients

  • Dough for single-crust deep-dish pie

Filling

  • 1 cup sugar
  • cup corn starch
  • ¼ tsp salt
  • cup water
  • 2 tbsp butter
  • tbsp Lemon zest
  • ½ cup Lemon juice
  • 4 large egg yolks

Cream Cheese Filling

  • 11 ounce Cream Cheese softened
  • ¾ cup confectioners' sugar
  • 1 tsp vanilla
  • ¾ cup heavy cream
  • 1 tbsp lemon juice

Instructions

  • For lemon filling, combine sugar, cornstarch and salt in a small saucepan. Stir in water until smooth. Bring to a hard bubbly boil over medium-high heat. Cook 1 minute longer, (count to 60 slowly) until the filling thickens. Remove from heat; stir about ½ cup of hot mixture into egg yolks then scrape warm yolks back into pan. Bring to boil again and cook for 4 minutes. Remove from heat and stir in butter, then lemon zest and lemon juice. Cool to room temperature.
  • For cream cheese filling, beat cream cheese and confectioners' sugar until smooth. Whip heavy cream with vanilla and small amount of confectioners' sugar until stiff. Fold the whipped topping and lemon juice into the cream cheese filling. Spread over pie shell.
  • Cover cream cheese filling with lemon filling. Refrigerate pie overnight.
  • If desired, dollop additional whipped topping over lemon filling. Refrigerate until serving.

Ingredients

  • ½ cup Expresso or strong coffee
  • 3 tbsp Brandy
  • 3 ounces Bittersweet Chocolate
  • 3 large egg yolks
  • 2 large egg whites
  • 4 tbsp Sugar
  • cup Mascarpone
  • 22 Ladyfingers

Instructions

  • Mix together coffee and brandy
  • Cut chocolate into small pieces
  • Beat the egg yolks with the sugar until the mixture is very pale and forms a ribbon. Fold in the mascarpone, a tablespoon at a time.
  • Whisk the egg whites until stiff, then fold them into the mascarpone and egg mixture.
  • Put a layer of ladyfingers on a dish, (1/2 of the number in the package.) Dip a pastry brush into the coffee and brandy mixture and soak the ladyfingers with it. – (I usually just pour from a measuring cup using 1/2 the amount of coffee/brandy mixture for the first layer saving the rest for the second layer)
  • Spread about 1/2 of the mascarpone over the ladyfingers and then scatter with pieces of chocolate.
  • Cover with another layer of ladyfingers, brandy & coffee, mascarpone and chocolate until you have used all the ingredients. Place the desert in the refrigerator for at least 6 hours.

  • ½ cup butter 1 stick
  • 1 cup bittersweet chocolate chips
  • ¾ cup light brown sugar packed
  • 2 large eggs
  • 2 large egg yolks
  • ¼ cup flour or gluten free flour
  • ¼ tsp salt
  • ¾ cup walnuts chopped

Bourbon Whipped Cream

  • 1 cup heavy cream cold
  • 1 tbsp Confectioners sugar
  • ¼ tsp vanilla extract
  • 1 tbsp Bourbon

Instructions

Pie Filling

  • Preheat oven to 325
  • Melt the butter and chocolate in microwave or double boiler
  • Using an electric mixer on medium speed, beat the sugar into the butter mixture until smooth, about 3 minutes
  • Add eggs, egg yolks, vanilla and bourbon and mix well
  • Stir in flour and salt
  • Pour mixture into greased pan
  • Bake for 18-20 minutes, just until the center is seet and the edges are crisp and begin to pull away from the side of pan
  • Set pan on wire rack and cool for 20 minutes. Serve warm or store in refrigerator

Bourbon Whipped Cream

  • In large mixing bowl combine cream, sugar vanilla and bourbon
  • Refrigerate for at least 15 minutes
  • With the electric mixer set to high, beat until soft peaks form
  • Spread on top of the pie
