Chicken
- 4 skinless, boneless chicken breasts
- 2 tablespoons Cajun Spice
- 1 tablespoon fresh lime juice
- 1 tablespoon olive oil
FIRE AND ICE DIPPING SAUCE (makes 1 cup)
This sauce also makes an excellent marinade for chicken or lamb
- 1/2 cup plain yogurt
- 1 tablespoon brown sugar
- 2 scallions coarsely chopped
- 1 tablespoon fresh lime juice
- 2 jalapeno peppers seeded & chopped
- 3/4 cup loosely packed cilantro leaves
- 1/4 cup loosely packed fresh mint leaves or 1 teaspoon dried
- Salt and freshly ground white pepper
